It's actually about 20g lighter than a single 6000mah battery, which is that HC was recommending...

We just tested out a new 6S 5300 pack that has a piss load of power

in answer to the original question, yes two 6S 3000s in parallel would work but you would need to be careful to always run the packs together as they need to be of a similar capacity and capabilty. Otherwise you can run into issues of one pack going down early and then taking the other pack with it.
