Could someone tell me where to find that nice looking wire covering that I see used to hide/protect servo wires. What's it called. Where to buy it? What size to buy?

I checked out cableorganizer.com, not a bad selection.
I checked out Jaguar Industries, not really for the individual consumer.

Also at Mcmaster.com too, though they don't have a big a color selection their shipping dept ROCKS. Alot of other neat goodies there including shrinkwrap, velcro straps and metric hardware. I got some cool blue metric screws for my Evo that really look good and eliminate the phillips heads that come in the kit.

Here's what I found to be the best combination of stuff so that you dont have to remove servo
connectors.
1/4" polyester mesh sleeving (page 735)
3/8" 3:1 ratio adhesive-lined (dual-wall) heatshrink
The 3:1 heatshrink is big enough to pass over the servo connector easily yet shrink down
tight. And the adhesive keeps it all from coming undone.
Cut the heatshrink into pieces 10-12mm long (you dont want too long) and leave a little
wire exposed at the servo connector because the heatshrink will prevent you from bending
it (another reason for the 10-12 length). Heat it/shrink it and let the adhesive cool for 2 minutes

4) I use 1/8" for my servo wires and 1/4" for doubled up leads, fuel line, etc.
