Can any one give me a little info on what mah to use with with certain size ESC's or does it really matter, i guess what im asking is with an 11.1v battery 3s, can you have to many mah, what will it effect, and what is a mah any how?

Check the max amps that the motor is rated for, then pick an esc that will handle at least that amount. The mah is the total amount of power taken from the battery. Rule of thumb is don't use more than 80% of rated battery mah. For instance 2000 mah battery, you shouldn't use more than 1600mah.

The only effect to having too many mAh is the weight and physical size of the pack.
