A hunting camp favorite casserole.
2 lbs polish sausage (preferably venison)
1 lb Wide egg noodles
3 10-3/4 oz cans of Campbell's soup, can be cream of, celery, mushroom, chicken cheddar, mushroom, all of one or any combination, your choice ( my preference is Cheddar, mushroom and celery
1 large onion copped coarse
2 cans Frank's kraut
1 package of Lipton dry onion soup mix.
Par boil sausages and then cut into bite size chunks.
Cook noodles.
Mix everything except onion soup mix, together and put into a 9 x 13 pan there will be some left over, for a small casserole dish, or just use 2 smaller casserole pans and freeze one for another day.
Sprinkle the onion soup mix over the top.
Cover with Aluminum foil.
Bake at 350 for 60 minutes.
Good stuff.

IRCHA Atomic Dum Balls
1 box Nabisco Nilla wafers
6 oz pecans
1.5 Tbs Molasses
1.5 Tbs Clear corn syrup
approx 1 cup Stroh "80" Rum
Powdered sugar
In a food processor finely chop pecans and grind Nilla wafers.
in a cup mix the molasses and corn syrup and about 6 oz of rum.
Add rum mix to Nilla mix and mix thoroughly.
Continue to add rum til the consistency is such that you can roll it into balls that will stay together. (It's about right when you squeeze a small hand-full and some liquid comes out between your fingers.)
Roll into balls of around 3/4 inch dia. and then roll in sifted powdered sugar.
as soon as you are done making the balls start with the first balls done and give them a second coat of powdered sugar.
IMPORTANT:
Place in a small AIRTIGHT container.
Does not require refrigeration but cool temps help to reduce evaporation.
Significant amounts of quality control done while making balls will result in odd shaped or loose balls, but also makes the job go faster. :mrgreen:

Curry Dip
This is a very easy and good dip for veggies or other stuff in the camper......
1 cup mayonnaise
1 teaspoon curry powder
1/2 teaspoon cumin powder
1 tablespoon fresh lemon juice
2 tablespoons grated or finely chopped onion
1 red bell pepper, cut the top out and hollow out.
Mix together the first 5 ingredients, and let sit in refrigerator for at least two hours. Place the dip in the hollowed out red pepper for presentation. Dip in veggies, crackers, pita wedges or etc.

IMPALA BOB'S PUMPKIN CHEESECAKE PIE
PREHEAT OVEN TO 350 DEGREES
INGREDIENTS FOR 2 PIES:
2 – 8oz. Pkgs “softened” Philadelphia Cream Cheese
½ cup Sugar
1 tsp. Vanilla
1 large Egg
Hand mix with wooden spoon, softened cream cheese, sugar, vanilla.
(Do not use microwave to soften cream cheese)
Add egg, mix WELL. This is the hardest part of the job, and the most important.
This mixture should be thick to prevent mixing of pumpkin with cream cheese.
Set aside in refrigerator while mixing pumpkin.
2 ½ cups canned pumpkin (One 29 oz. can of the Libby’s Pumpkin “For Two Pies”)
1 cup sugar
½ tsp ginger
2 tsp cinnamon
½ tsp nutmeg
dash salt
2 cups evaporated milk (1 can will work)
4 eggs slightly beaten
Combine in large bowl, pumpkin, sugar, spices, salt.
Add eggs, evaporated milk…..mix well
2 Pillsbury ready made pie crusts (or make your own!)
Fill each crust with ½ of the cheese mixture.
Add pumpkin mix carefully.
Bake 1 hour or until set.

4 oz diced salt pork
2 lb chicken
8 cups water or chicken stock
3 potatoes, cubed
3 small onions, chopped
1 28 oz can diced tomatoes
2 cups corn
10 oz pkg butter beans, thawed
1 TB worcestershire sauce
salt and pepper to taste
In large pot, combine pork, chicken and water
bring to a boil
reduce heat and simmer about 45 minutes until chicken is done
Remove chicken, cool, and debone. Chop into bite sized pieces and return to pot
Add all vegetables and seasonings, stir and simmer 1 hour or til potatoes are tender
This is something I have finally had to learn to make for myself. Yanks just don't have this kind of yummy food!!

The Brunswick stew looks great.....
when we lived in New Jersey we frequently visited an old Mom and Pop Italian restaurant that had the BEST Calamari Marinara. Now that we are now in North Carolina we can not find anything like that in a restaurant much less a recipe for making it at home.
Just a simple Marinara with Calamari.........not even a recipe on the food network....does any one here have an old home dish of the likes that they would not mind sharing a recipe for?
I would LOVE it.

okay, okay
I can see Will is Jones'in for squid :)
2 lbs of Squid cleaned and sliced into rings
1/4 cups of Virgin Olive Oil
4 Cloves of Garlic
1/2-3/4 cups Onion chopped fine
1 Tbsp pine nuts (optional, can substitute slivered almonds)
1/4 cup Parsley chopped
3 Tbsp of fresh basil chopped
1/4 cup Dry White Wine
1 can (14oz) crushed or dice tomatoes
salt and pepper to taste
Heat oil and saute garlic and onions until browned/Add tomatoes,basil,parsley,salt,and pepper/simmer sauce for 45 minutes/add pinenuts,and cook for ten minutes/add squid,and wine/cook til squid is tender
traditional recipes (north boston) will include raisins (couple Tbsps) and black olives. I don't care for these so they are omitted.

8- cloves of carlic - peeled
1- 28 oz can whole tomatoes
1-28 oz tomato sauce
Salt & pepper
Oregano
1-pint heavy cream
Do about three rounds of EVOO in the bottom of a soup pan. Brown garlic. & oregano. Add tomato sauce. Crush the whole tomatoes by hand and add to pan. Simmer for 10 +/- min,
Add cream and heat but do not boil. Put mixture in blender and serve.
This is some good sh&t...
