Hi folks,
This is the most requested item I cook.... have fun and enjoy !!!
BLAZIN' SADDLE BEANS
1 lb of Pintos, Black Beans, Red Bean combo or single type.
1 onion
1 bell pepper or 1/2 green and 1/2 red/orange, etc.
1 clove garlic
6 Jalapenos
1 tbs Red Pepper
1 tbs Black Pepper
1 tbs Garlic Powder
2 tbs Course Salt
1 or 2 lbs of Smoke Sausage
1 cup rice
2+ tbs of cooking oil
Water
Soak beans in water overnight.
Add oil to pot, then onions. Cook onions, jalapenos and bell peppers clear; then add garlic and sausage. Cook about 5 minutes. Add beans, add water, bring to boil then cut back to simmer. Simmer for about 1 hour... sometimes 2 hours. Depends on beans.
Add rice about 30 minutes from end of cooking.
Serve and enjoy. Beer helps this phase. hehehee
Add, subtract and have fun with this recipe.

Cooking in olive oil is super if you don't do it already. It adds great flavor and is better for you than oil.

This is long promised for John Garst...
As you requested..
6-10 slices of hard bread of choice, chopped into cubes.
slices of ham, chopped into chunks or sliced ham chopped up, (I used one half a smoked oscar meyer package), you can also used cooked sausage.
1-2 cups cheddar cheese grated
10 eggs, room temperature
4 cups milk, of choice, (I used 2%)
salt and pepper to taste
In a casserole dish that you have, mine is about 12x15?, place the bread chunks, spread on the bottom.
Break eggs into a bowl and then beat to foamy....add milk. set aside.
spread the ham and 2/3 the cheese over the bread. Use your hands and kind of shake it around to sort of mix the ham and cheese a little into the bread. Sprinkle with a little pepper, and a little salt (if you are not on a low sodium diet for Blood pressure, mine was without the salt).
Pour the egg and milk mixture over the bread, cheese and ham.
Use a large spoon to kind of push the bread into the egg mixture to help it absorb the egg and milk. Do that for about a couple of minutes. Sprinkle the remaining Cheddar cheese over the whole thing.
Cover with tin foil. Place in fridge over night.
Next morning heat oven to 375-400 depending on heat of your oven.
Place tin foil covered dish into oven for approximately 50 minutes. Remove the tin foil to allow for browning.....maybe 10 minutes.
Use a knife to stick into center, when it comes out relatively clean...it is ready.
Let it sit for 5 mintues before cutting and serving.
John....eat it up.

Hey John, are you coming to Mac's? If so, I expect to be able to sample this dish. We should have a travel trailer by then that we can heat or cook it in.
