I've removed my governor for the time being, in an effort to learn some more about setting up proper throttle curves and comp. mixes.

When I piro to the right, the heli climbs. When I piro left, it descends. So which is the proper way to compensate for it... a tail rotor to collective mix, or a T/R to throttle mix?

Usually it works other way around. Heli will climb some piroing to the left. Due to the fact it takes less power to piro with the torque.

I add throttle when right rudder command is given and take away throttle on left rudder command. That is the mix I have used for last few years.

tail rotor to throttle mix. Should be one already in the radio. Rudder>throttle.

I'd have thought it would be the other way around, too, but sho'nuff... it's right=up and left=down. Done it a hundred times to make sure.

I just couldn't get my head around whether I needed to alter pitch or throttle. In fact, I'm still not sure I fully get it, but I'll try the throttle mix as you suggested.

Thanks for the suggestion!

Use the mix that David suggested and adjust it as needed for what your model requires. Don't use pitch as the slave; use throttle.
