I am not as familiar with lithium polymer batteries as I am other re-chargables like NiMH and NiCad and was wondering about their characteristics concerning charging, discharging and holding charge. All I know is the horror stories I've heard about them exploding and catching fire if improperly charged and to not fully discharge them. Do they hold their charge well and is it OK to "top them up" or should they be discharged pretty low prior to recharging?

they hold charge EXTREMELY well w/ VERY little self-discharge.

They don't have the memory problem of NiCd so you can top it off. Shouldn't over charge it. And shouldn't completely discharge it. They 3.7 volts per cell.

If you are going to Store the LiPo away for more than 30 days it is best to discharge the battery to about 3.85v/ cell. This ensures the best capacity retention, as LiPos will lose capacity over time, but lose it least at 3.85v/cell. A fully charged LiPo cell is about 4.2 v and a fully discharged cell will be 2.8 or less, personally i never go below 3.2v/ cell.
