What is a governor and how would it help in flight?

A governor is a device that locks in the headspeed to a certain RPM which can be set by the operator. It helps because it lets you be lazy with the throttle curve since the radio now has no control over throttle position untill the governor is turned off or the servo position is brought back to idle. A nicely set up throttle curve is better than a governor because the governor will always be a bit behind during a pitch change since it reacts to headspeed, a good example would be tic-tocs since the pitch changing alot. Once you have basic skill in setting curves a governor can really make life easier for a noob and for that matter anyone.
