G3.5 with DX7, how do you use pitch/throttle curves/thold?

Hi guys
How do you set up the dx7 with curves so you can get negative pitch and all that. I've seen the other threads where people say to use an airplane model. I have it setup with a 1 servo heli model and it sort of works. But I'm a noob to all this. So how do you do all this? Thanks!
