have Throttle jockey pro that I am flying in my Raptor 50 with an OS 50 and a 9ch Futaba radio.
I have set the Governor up as the direction have stated and also from the PDF file on Model avionics web page.
Two questions
1. Do I still run “V” style curves in idle up? If I don’t then when I get below 1/3 throttle for inverted the Throttle Jockey turns off.
2. Which ATV do I adjust to adjust the head speed?

You still need to run a V curve just in case you throw the magnet or the sensor fails, both can and do happen to all gyros. The V curve while not optimized will allow you to save the heli. I have my V curves set for a head speed that is noticeably slower than my normal flying so that I will notice if there is something wrong with the gyro.
On the TJ Pro you are controlling the head speed with the aux channel.
Setting the ATV of the Aux channel is the MA recommended way of setting your speed, but that limits you to 2 speeds and off.
I do not set my Aux channel to a switch, instead I set it as a flat line that will give me the headspeed that I want in each flight mode. So for my setup I have a flat line of 87% in idle 1 and 90% in idle 2. This way you can have as many speeds as you have conditions in your radio. I am currently using 4 conditions / head speeds.

How is that TJ pro i have been thinking of getting a Gov but not sure which one to go with. Im flying a Rap50 v2 with a Hyper i also have a JR DS 811 on my throttle but im just starting 3d and not sure if a 811 will suffice or if at my level a 811 is fine

My TJ Pro has been great. The only drawback is that you still need a tach to set the head speed. But then I still verify the head speed with a tach if setting up any other gov.
The 811 will be fine for a while yet.
