I am, I think, ready to move up from a CX2 to a CCPM (one blade pair) bird.
What are your suggestions for a REALLY stable, "easy" to fly (for a beginner) heli?
And, what mods does it need to make it right?

Don't worry about ccpm. Buy a Raptor 30. No modifications necessary. Deciding which helicopter to buy is the hardest part. But, once you get the Raptor home and get it flying you will be happy.

Do you want to stay with electric or go nitro? Electric has less mess and support equipment, but you pay up front ofr "fuel" (battery packs).
DO you have a place to fly? Flying field or park? A 400mm or so blade length is about hte limit for safe park flying. This puts you in the Trex 450 - Lepton/Quick of Jpana EP range for electric, and the upcoming Trex 500 will be at the upper limit. A Raptor 30 or 50 is a bit too much to safely park fly.
As for nitro ships, Raptors are well sorted and well supported. However thenew Align Trex 600N is suppsedly a pretty awesome machine. Lots of choices. Personally I would just go to a 50 nitro if I went nitro. A bit bigger, but will be something you can fly for years with minimal upgrades. Most people seem to upgrade the 30s to 50s as they get better, which is a bit more than a minor upgrade here and there.

I think I do want to stay with electric. So far I have not joined the local club, but need to when I make the shift to single rotor. I'll need all the help I can get! :D I've been thinking about the Trex but have not made a decision yet.
After a couple weeks away, I find I have to relearn some hovering skills with the Blade CX2. so I am working on that, mostly indoors.
I have a decently large back yard to fly in and, when I join the local club, I'll have use of their flying field too, which will be good.

Paul what's your budget for the hobby and how serious are you intending to be? Check out the nuggets from the pro's video. That tells you all you need to know at this point until you make some decision on budget and seriousness.

If you have good budget, go for the Trex SE (Google video (http://youtube.com/watch?v=9UHFA_koStE)). Very good heli. If your budget, you can consider the esky king 2 (pictures (http://www.china-magic3.com/category.php?cat=46))
