Everyone appears to prefer the Dean's connector over the E-Flite EC3/Dev type connector. Why is that? The E-Flite connector has all gold leads concealed and is much easier to plug together and unplug.

Dean's have a much higher current rating and from my experience are no harder to plug/unplug if you have soldered them correctly.

I have installed / used several sets of Deans connectors, and they were all pretty tough to disconnect. I prefer the Astro zero loss kind because they are easy to solder and disconnect. I guess the argument could be made that deans being hard to disconnect is a good thing, but if you're counting on the battery connectors to hold a battery in place, odds are you've got bigger problems.

I was using JST connectors on my BCPP one time and it came unplugged somehow so I had to attempt to do a pirouetting auto and sort of saved it, now I'm using all deans...

I hope this doesn't imply you are pulling the deans apart by the wires.

I actually prefer Anderson Powerpoles (http://www.andersonpower.com/products/standard-powerpole.html).
