Why is the pitch set at -3 degrees when the throttle is closed?

You want a little negative pitch available so you can get the bird to the ground in windy conditions. It's always good to have a little negative available to you in normal flight mode.

Yup if its windy the thing will still climb even though you have let off the throttle. With the slight bit of negative in there you can "pull" it back down from the winds grasp. I have had to kick mine up into idle 1 to bring it down before because the -3 in normal mode was not enough. Granted I probably should not have had it up in the first place in that much wind.
