this may seem a bit dumb, but instead of buying a cable to hook up my dx7 to anotehr for training, could i just make my own out of 2 head phone jacks and some wires?

If it's anything like the ones I've played with you can. I'll bet kgfly is the guy that would know if that cable carries anything beyond the PPM signal.

For JR/Spektrum, you can just buy a cable at Radio Shack. The nice thing about the JR cable is that is uses 90 degree connectors. The bad thing is that it is expensive.

Mono or stereo? Does it need to be shielded?

The pics show mono plugs. I would do shielded as you are working in an RF environment.
