sorry for such a stupid question but can someone tell me what is the purpose for the screw to stop movement on the pitch gauge?

The way to do it is set the gauge for whatever pitch you would like, for example 10 degrees and then tighten the screw to hold it in place. Then set your radio for whatever parameter you are trying to adjust. Then adjust the pitch curves according until the base of the pitch gauge is parallel to the fly bar.
This may not be 100% correct but its the idea.
