Is it a bad idea, to extend the wires between lipo and ESC, such that I can put canopy on, and then be able to disconnect it without removing the canopy?
I am also thinking of putting a heavy duty switch instead of deans connector. Is this a bad idea, and if it is, why???

I have my connectors coming out of the hole in the bottom of the canopy. I put them together and stuff them back up in there, go flying and then pull them back out and disconnect them at the end of the flight. That method has worked fine for me thus far.

Problem is, my canopy doesn't have a hole at the bottom :DOH

Easily solved. :)
You don't want to lengthen the wires between the battery and ESC much at all. And switches are a BAD idea. High failure rate with the vibration of the heli and the high current levels.
You can use a pair of Deans as a switch though. Wire a female Deans into the positve (red) wire to the ESC. Short a male Deans using a copper bus bar or a couple of pieces of heavy wire. Cover the short with some shrink wrap. To power up, plug the male ou just made into the female.

Excellent idea. I suppose lenghtening the positive wire only, with say 10cm is no problem?

I try to not lengthen any of the wiring between the battery and ESC.
But you will probably be OK.
It isn't a bad idea as such, but if you charge the LiPo in the heli, and it goes on fire, then you'll lose the heli.
