Ok so I decided to make a new thread from me or anyone else to post their questions about it if you need help setting it up.
Ok so I have a quick question. On my Ar7000 rx I have my logitech 2100 gyro plugged into the "RUDD" channel which is correct, and the blue wire from my gyro is plugged in the "gear" channel. So on my DX7 in the input select menu I should have AUX2 under AUX2 and then GYRO under GEAR... Is that correct? So then this makes my gear switch enable the head holding mode?

Yes kind off.... When you assign the GEAR to GYRO then the 2 gain settings you get in the gyro menu will be tied to your flight mode switch. So for instance in normal you could be rate mode and idle up HH mode. BUT most using the gyro menu don't do it this way and never use rate mode with the gyro menu. Most that want to be able to switch rate to HH mode leave the GEAR on GEAR and use the gear switch.

So if I left it plugged in that way (gyro to rudd and gain to the gear on the AR7000), and set it as GEAR to GEAR, The gear switch would be what switches it to rate mode? Rate mode means no headhold mode right?

Basically you set the gain and mode using the end point adjustment. A - setting is rate mode, a + setting is heading hold mode.
I set the switchdown to be -50 and only use it for setup. The up position is adjusted for the proper amount of gain in HH mode.

I have a quick question, what exactly are dual rate, and auto dual rate for with the DX7?

That's correct.
You'll look at your gear channel and when you flip the switch, the arrow will go from the positive number to the negative number. Either side could be HH mode depending on which way the channel is set. It doesn't matter, just keep in mind that turning the value towards 0% reduces the gain, regardless of whether it's on the +100% side or the -100% side.

Oh ok thanks for clearing that up.Theres a little light on the logitech2100 gyro that turns on when head holds on so I will have to take note of that. To turn the piro rate down you have to adjust that in the "travel adjustment" menu right? Will 80% be much on a difference from the original 100%?

Yes, use the rudder channel travel adjust to control the piro speed in each direction.
You'll notice a difference from 100 to 80, now sure how much but you'll definitely notice it has slowed down.

Does it actually slow it down or does it shorten the distance it travels?

Changing the number from 100% to 80%(this would be on each side, left and right) would cause the piro rate to be slower, IE if you held full rudder stick the heli would spin around at a lesser speed.
Also keep in mind that when you change this value, you don't have to worry about binding because it has nothing to do with the mechanical travel of the pushrod or pitch slider.

That is good know. I rather adjust it from the transmitter than on the gyro itself. I can not wait to get this thing up in the air. I just have to do some wire management and get the tail set up and I should be good!

Ok I got one more question... I go into the menu and When I have it set for GEAR to GEAR why does the "gyro sens" menu disappear from the menu? Is that not the function to adjust the gyros gain?

When you set gear to gear, you're using the gear channel and the gear switch to control the gain and to switch between rate and HH mode. Don't worry about the gyro sens disappearing as you're not using the gyro sens function anyhow.
You're now using the gear channel TRAV ADJ to adjust the gain and not the GYRO SENS menu that's why it's gone now.

Yeah so I think I got it all tuned in. Some bad news though thats going to postpone me further... It was knocked off the shelf it was on and it snapped one of the tail blades... I ordered some new gorilla gear ones that should be here some time next week.

Just an FYI, many consider the Gorilla tail blades to be too flexible leading to a sloppy tail. IMO, the K&B or Align batwing blades are the way to go.
The above is why you will definitely want to get a good stock built up of spare parts:D

Well the gorilla gear is all ready on the way, but I will look into those ones as well. I think I am going to get the gorilla landing gears too. I will get this bird up next week! Can not stop me!
