I would suggest a fixed wing (airplane), not a helicopter. If you've never flown a heli, nor an airplane, you have a VERY steep learning curve. As far as interfacing with a laptop, you can via a serial interface using the transmitter as the master, and the computer as the "slave". Even this is complex, and you'd really need to know what you are doing.
Might I ask what school level this is for?

The easiest, plug n play method would be to install a RC Simulator and use the interface that the sim uses. The drivers provided with the sim and its adapter make any compatible Transmitter act like your average gamepad. It should then be easy enough for a programming type to interface to the Windows Gamepad service.
Keep in mind, while the transmitter is connected to the laptop via the interface, it will not be transmitting live. You can't have both.
