What is easiest way to increase/decrease pitch on the helicopter, not through the Tx? For example, if my servo's are 100/100 and my pitch is + and - 9 degrees how do I get more pitch?

Move the link ball further away from the servo shaft. The servo will still rotate the same number of degrees but, the linkage will move further as you increase the radius.

If you have adjustable swash mixes, that's still the better choice. You don't need to change your ATVs, just the mix percentage.
However, if it's a case where your mix percentages are already at maximum, then I agree that increasing the throws mechanically is the way to go rather than increasing ATVs. Just be aware that doing so will affect your cyclic pitch as well as collective.

A little off-topic, but what part of Texas are you from?
In a CCPM heli your going to be using the servo ATV to adjust out CCPM interactions and the swash mixing to get the pitch ranges you want. You really dont want to be moving the ball further away from the shaft of the servo because you will be reducing the resolution.
