I have 2 T-Rex models programmed into my DX7. However, the Gain Function only shows up in the menu for my 600, not my 450. Why might that be?

Stating the obvious: are you in heli mode?

On page 91 of the manual (I have the airplane version so, the page number may be different if you have the heli version of the DX7) I found this for Gyro Sensing:
"Note: In order to access the Gyro Sensing function, it is necessary to select Gyro in the Input Select screen and assign it to AUX2 or the gear channel. See page 73 for more details."

Maybe you do not have that set in your 450 setup.

Yep. I had the same issue when I added the 2nd model to my DX7. Finally found the INPUT SEL screeen and figured it out.

Thanks guys. I have the radio in heli mode. I will try to find the Input Select Screen and choose the Gyro Function.

It is interesting that the heli holds rock solid as is. Do you know what the default gyro gain is? (Or, without choosing the Gain Function, if the gyro sensitivity is controlled by the Gear Function?)

Hold the two buttons down that you use to get into programming mode down while you turn on the radio.

Everyone gripes about Futaba programming but you can change everything to do with a model w/o turning on the radio to get into the service menu.
