On both my Trex 450 XL & SE's, I'm replacing my radio and receivers with totally different make/type etc - should I go all the way back to basics on Finlesses setups or is it possible to tweak the new radio settings to match my old radio settings?

Start all over.
It'll get you familiar with your new radio and you'll be sure everything is working the way it should. Absolute values (for swash %, end points etc.) do not transfer well between radios in my experience.
It really doesn't take all that long, will give you peace of mind and to me it is actually quite fun playing with the TX.
