I can buy 2 2500 mha packs cheaper then 1 5000 mha would it bo ok to hook them up in parallel to my rx.

Yes, you can plug a battery or switch into any open servo port.

Two batteries in parallel will typically have lower impedance (less voltage drop) as well. Using two switches to feed the RX through two R/C connectors also lowers impedance and adds redundancy.
