The JR DS8900G servo is set to be a 4.8 volt only.
If I want to run it on a 6 volt BEC would I need two step down regulators, as I understand they only reduces the voltage by 0.7 volts each?

Mine has been working fine on just one of Aligns stepdowns. If you are really worried, get spektrums regulator.

I do not recommend this, but I have been running mine on a regulated 5.8V for some time now. No problems.

A 4.8 volt Rx pack is 4 cells, and about 5.6 - 5.7 volts fully charged. So a single step down is fine.

I was planning to run it on my T-rex 500 where the ESC/BEC is programmed to 6 volts

Run no step down at your own risk. You could burn out the servo. Tail servos work a LOT.
