for the titan you will use 15mm out on the arm, and about 23% gain. Use the ATV method on channel 5 with 50% expo on Rudder with ATV for rudder at 100%.
Adjust rudder ATV for piro speed, expo for sensitivity around center stick.
Verify that you are in HH by powering up, give a rudder input. If the servo moves and stays when you release the stick, you are in HH. If it goes back you are in rate mode.
Here's a brief explanation of gain comparison to using the gyro sense menu:
50% is gyro off This applies to ATV or gyro sense value.
The 62% from the manual is translated to 12% gain. (62%-50%=12%)
To utilize ATV instead of Gyro sense, add 'X' to 50% to achieve Heading Hold, Subtract 'X' for Rate mode.
Following setup tip from above, Your settings for gain would be Channel 5 ATV Low of 23% (rate) and 73% (heading hold) as a starting point. You should expect to have to reduce values to eliminate wag, and have an aggressive stop.

I'll have to measure the wheel to be sure, but for a quick guess 18mm from center, and gain around 20%. Expo and rates per the 600e/n

Viper, Tail bounce is from low head speed. Rise your head speed 13 pinion normal mode 80-90-100.

What is the difference between using the GEAR switch and setting the gear switch to GYRO?

It works fine, but what is the GYRO setting for?
