My favorite out of those listed right now is the GY611. I had absolutely no issues setting it up, only needed to make one gain adjustment after the test flight (thanks to the Nigel Brown setup notes http://www.helifreak.com/showthread.php?t=60846 ) and I love the way it looks with the interface mounted on the heli.
I thought I would like the Spartan DS760, but I'm not happy at all with availability of their products. Getting your hands on one takes a lot of time and patience, which I did, but I'm still waiting on the USB flash link that goes with it. I would really like to be able to fully utilize my investment as it was advertised, but whatever...:arggg: It's all part of doing business and why some prosper and some don't. Add one more point for the GY611; all the programming functions are available right on the heli.
For that reason alone, I'm not really too excited about my DS760 anymore. I'm sure it's a great gyro, for the lucky few that have access to the cable and feel like connecting it to a computer every time they want to make an adjustment. I think the cable should be included with the gyro.
I do like the size and weight of the Spartan over most other units, though. And in all fairness, it does control the tail quite well out of the box and with some tweaking through the transmitter, but I didn't buy it learn another set of transmitter tweaks.
One gyro you didn't mention that I also like, even more than the GY611 is the Curtis Youngblood Solid G. It also has external programming available, but in a smaller, standalone unit that will fit in your toolbox or parts box. AND it's in stock and available every time I want to buy one.
Seeing that you're in France, I couldn't tell you what store to buy anything from. I think most of the big ones advertising on this site will ship overseas (i.e. ReadyHeli, A Main Hobbies, etc.)
