When I was building my EB I asked the same question. JR 8311 was the majority response. I did just that. 8311 all around.(Tail not included). Two years later and they've been great. No problems with the servos. I believe it's JR 8411 now?.
I'm sure the equivalent Futaba servo would be just as good. Personal preference. Check out the Intrepid EB packages offered at Bergenrc.com. That will give you a pretty good idea of what you should be using on it. They wouldn't recommend something that isn't up to the task!
You could go a little lighter on the throttle servo but I definitely would not skimp on the rest. It's a big bird. As well, I would buy the same servo for the whole heli. Throttle, collective, aileron, elevator.

I run an 8611 on the coleective,8311's on the elevator and aileron. Throttle has a 9254 and the 401 gyro with 9254 on the tail

I have S9252 on the cyclic and an S9151 on the collective. Tail is a GY401/S9254 and throttle is a cheap analog ball-bearing servo.
A lot of people use the S9255 on CCPM machines because they're consistent. It's basically a more modern version of the S9255 designed for helicopters.
If you'd like to run a 6V system, you could use something like the S9351.
Most of the Hitec digital servos would work well, but the Karbonite gear trains (ex: HS-6965HB, HS-6975HB, HS-7966HB, HS-7975HB) would last longer. Metal gears tend to become a bit sloppy over time due to gasser vibrations.

9252's all the way around even on throttle - 611 on the tail with a 9256.
