Did he not have the correct type of insurance for robbery/burglary?

Sounds to me like a planned deal to me. Don't see why a shop would just close just because some items were stolen. I would think the insurance company investigated and found a reason not to honor the claim. The shop would have had to have Fire/Theft insurance policy to go along with its Liability policy. If they didn't have Fire/Theft insurance, not too smart of them.

Exactly what I was thinking! Sounds like a shady plan gone wrong. Prob a last ditch effort to minimize a failed business venture. At least he didn't torch the place. Look for much more of that with the failing housing market and skyrocketing cost of living increases.

Ok, I'll explain: This was a new LHS (1 or 2 months old), and he got all his stock from another LHS (that closed) where the guy worked. They stole almost everything (except a crashed trex and a couple of sets of Hirobo wood blades) and they were never found. The insurance wanted, in order to give money, all the invoices from the stolen items. THAT IS the problem: most of the items were over 3 years old and invoices were lost. It was too much money for him to reopen.
THAT'S IT! stop firing him!

He didn't have a bill of sale from the purchase of the entire store inventory?

wow not to bew critical but if all stock was three years old why would he want it in the first place as obvious not great selling items. Just my two cents to the conspiracy.

Those 3-years items were only expensive ($$$$$) nitro cars
