Anything is possible, with the new torque tube available for the 500, it should be a lot easier. Its just a matter of finding or making the right size parts. I have never seen one up close, but the head on the 500 looks quite small, I'm not sure if its up to the task of handling the weight of 600mm blades.
Bill did some calculations on the weight of 600 blades at different RPMs, and his numbers were verified by Spork.
1700 rpm's : 404 lbs.
2000 rpm's : 560 lbs.
2300 rpm's : 739 lbs.
Also, you'd need to get a lower KV motor and/or gear it down, then you may have to worry about stripped main gears. But for AP/AV/FPV, you wont be doing any hard pitch pumping.
Give it a shot, I read someone was using a Trex600 motor in their 500 and was working well.
:edit:
another thing I just thought about was grip size. 600 blades have a 12mm root with a 4mm bolt hole.
