When I charge my FP EVO 25C 2170mAh batteries, I think I'm supposed to set the pack mAh to 2100, as 2200 would be too high... will I still get a full charge?

If you are using a CC/CV charger, the charge rate does not determine how "full" the charge is. It just determines how fast you get there. Either setting would be fine, the lower one is just more conservative.
What charger do you have?
