Im just starting out in the RC Heli hobby and have boiled my choices down to the Trex 450 + Spektrum DX7 controller. However, there seems to be multiple models of the 450 and im wondering what are the differences between all of them?
My second question is, are there any recommended gyros? and what should i be looking for ? solid state? And is a 2100 mAH 2 cell lipo good enough to begin with ? or will the higher end mAH lipos be too heavy for a 450 with a matched 3700Kv motor?
Also what are some of the flight sims that ppl are using to simulate specifically the Trex450?

Get the version with the most aluminum possible. A 450SE V2 would be best.
The 401 gyro is a workhorse and well understood. Get another gyro if you want to experiment; but the 401 is probably the best choice.
The 2100 batteries are okay. I fly heavier 2200 batteries and they work fine too.

SE is the all metal/carbon fiber version - actually two versions. The SE and the SEV2. I have both, and they fly pretty similarly with a slight edge to the V2. The SA is the aluminum framed bird with some metal parts - usually no motor or ESC. The S is kind of an SE lite. Some metal parts and comes with motor/ESC.

Futaba 401 seems to be the popular choice, but the JR770 is also a "contender". TR servos - Futaba 9257 or JR3400G. You want fast and digital for the TR. Either of these two I mention are both.
2S LiPo isn't gonna cut it. You'll need a 3S. 2100mah range is fine, but make sure you get at least 20C packs, especially if you end up with the 430LX motor.

Phoenix (http://www.phoenix-sim.com) has Trex450s that fly pretty close to the real thing right outta the box. A little tweaking and it'll fly just like yours.
