Can anyone explain how this works and how you adjust the amount of expo when using this option in the swash mix screen? Thanks.

I think if your pitch curve is wiggly, turning the expo on will make the curve smoother.
If you want expo, use the expo/dual rate screen to set up your cyclic/rudder expo

Swash expo isn't the same thing as control expo.
It smooth out the transitions in the curve. It also makes the collective more linear by mixing out the non-linearity of round servo horns.

Pinecone -- I'm thinking of using it -- which is why I'm trying to find out about it. (there is nothing in manual)
Let me pose an example, based on my pitch curve in normal mode (from the Finless video). My curve is 40 inh 50 75 100 (two straight segments) -- does the swash mix expo round out the curve by dropping the 50 number a bit??? Is that what you mean by rounding it out? If not, I am totally lost.

I do not think its something that will be visually displayed. It just compensates for the servo horns, as at each extreme a 1deg movement of the servo will not equate to the same link length movement in MM as it would if the servo horn was in the centre (90deg angle)

There are 3 places you will find EXP or EXPO on the DX/JR radios.
The flight controls where it softens (or sharpens) center stick.
The pitch and throttle curves, where it rounds out the sharp edges of curves, this is simple to see, turn it on and off, its effect is very obvious of you set up a V curve.
Then there's the SWASH menu. This compensates for the fact that servos give you more throw at center than at extremes. Turn it on and set your pitch up. If you turn it on after the fact you will have to increase all of your swash mixes somewhat.
If you're using sub trim to even out your servos though, I'm told enabling it will cause some strange behavior. You can't control the amount, just turn it on or off.

Exactly.
IIRC I had to bump my swash pitch mix about 10 points for the same throw.
I found I liked it as it made hover pitch changes smoother.
