bank switching use ? dx7/ar7000 t600n

I thought i read in the manual that bank switching isn't to be done during flight.

I watched the video and it looks to be that he is changing banks with flight modes.
Of course i could be wrong being such a newbie.

Lets assume im wrong and you can switch during flight.

Bank 0 takeoff and hover settings
bank 1 more agressive settings (gov on at 2000)
bank 2 more agressive settings (gov set to 2100)

i can use the aux 2 to set this (dx7/ar7000)

Should i use a Y jack to set rpm on the gv-1 ? (currently has 3 rpms ( off /2000/2100))

I've never understood why anyone would want to switch banks. Setup bank 0 so it flies good....then fly in bank 0.

You can still use throttle and pitch curves set to your flight modes. Maybe I'm missing something.
