I think I am finally getting closer to figuring this monster out.
I have an old Xcell gasser with a new G26 3D Max. I have run my 1-gallon of break-in using 5 oz Lawn boy Ash less and am now running 2.5 oz Amsoil in gas. I just replaced the plug that was used for break-in (it was really ugly).

I have machined flat the warped spacer.
I have the fuel lines and linkages setup per Bills recommendations.
The head speed is at 1750 6.43 gears 700mm blades

Issue No 1.
When starting I always get a hot start. I have to hang on to the head for dear life till I can close the choke halfway to slow the engine down. After warming up for 30 seconds I can open the choke and the RPM is normal. The idle remains at a nice low tick over at any time I land and throttle back to idle, throughout the full tank. The high RPM is only for the first 30 seconds after starting a cold engine. It does not happen when starting a warm engine.

Issue no 2.
This is more a matter of me learning how to tune properly. I had my needles set so rich and I thought was good. I started to lean the needles and I started to get a tail kick so I always thought that I was about right, and richened it back up to where the kick started to go away.
But my needles were always at around 1 3/4 to 2 turns. Everyone is always stating around 1 1/4 to 1 1/2 turns.
So yesterday I started leaning the low needle. I got to where the tail started to kick and this time I just kept leaning more and more, and low and behold the tail kick started to get less and the heli never flew so smooth. I am now down to what I am guessing to be around 1 3/8 on both needles. The tail is still kicking at around once every 2 seconds. I will continue to lean it out, but I ran out of daylight and I burned ¾ of a gallon in one day. I am only moving the needles about ½ the width of the screw slot at a time. I do not have a temp gun but the engine is cool enough to put my fingers on the bottom and keep them there. The tuning that I have done seems to have helped issue No 1 a little. The head speed is now solid as a rock through any maneuver no matter how bad I mess up.

Any thoughts as to where I should go from here. Mainly with issue No 1.
I have the only flying gasser in the area so there is no local help available.
There are a few other gassers around but they are waiting for me to figure it out and then teach them.

I feel you pain. Or pleasure. I have been tuning my Hanson modded G26 for the last 2 days.

In regards to you temp issue you may want to pick up a Venom temp monitor (http://www2.towerhobbies.com/cgi-bin/wti0001p?&I=LXHUH3&P=7) it has been the best $18 bucks I have spent since you can read it with the heli still running.

Where are you mounting the sensor and what temp am I shooting for at that spot?

Hottest I have let it run is 230 and it seems to run well in the 200-220 range. The sensor loop is in between the closest fins I could reach without taking the heli apart ;) Like the 3rd one up off the block.

I will get a Venom and try it out.
I know that I am nowhere near 200°F, my guess is around 130 in about the same location your at.

I still think that I have an air leak somewhere that seals up once the engine warms up.
That would explain the high RPM till it warmes up.

I will be out of town for the next 4 weekends so that means there will be no more heli fling till mid December :(

For me: I can't get my fuel lines to "fully" seal. It is driving me batty. First tank, no problem, 2-4 it got worse and worse. At home I took it apart and re-did all the lines, double zip-tied everything and that BIOTCH still drips. :arggg:

Are you sure that it is leaking from the fuel line connection?
It could be a cracked fitting or leaking where the fitting joins the carb.
Or maybe are you using to big of a fuel line?

Well I used the lines Century said but they had to be "wrong" on one of them! It is just too big. I changed that line to a smaller diameter. I am gonna re-do everything "again" tonight and recheck the fittings.

DebainDog, in regards to the venom temp gauge. Where are you puttting the "sensor" part of the wire (the wire area with the heat shrink). I have mine currently at the carb side of the head and on about the 4th fin down.
