I've been setting up my Stratus with my new 14MZ. Gotta love this radio

Have set up the GV-1 as the same way on my PCM 10X. The GV activates on the throttle.

How have you guys done with the GV-1? Have you ON/OFF switch for it?

I have it setup for both throttle and on/off switch. The throttle part only comes into play during Normal condition where the thr curve is below the GV1 throttle setting. I keep the on/off switch in case I don't want to use governor, e.g. tuning or checking engine and for starting.

How do you set up the on/off switch? Have never done that before.

You need to hookup the GV1 to three Rx channels (throttle plus rpm AND on/off) and then enable both throttle (StSw) and on/off (SWPt) on it. On the 14MZ, configure whatever channel you used for on/off (normally 8, with 7 being the speed control one) under the Function screen to use a radio switch, e.g. SD.
