I keep hearing people say 3 point 5 point and so on throttle curves. What does this mean and why are they so different?

On a 3 point curve you can only adjust the top bottom and middle stick position.
On a 5 point cuve you have an adustment between each of them.

Throttle and pitch are both on the left stick. Using curves allows us to adjust them separately. That way you can put in more throttle or less pitch to avoid bogging the engine. More points just means a finer adjustment like SteveL said.
