I am setting up a GY520 on a T-Rex450 using a DX-7. What should I use for initial gain settings? The manual says 70% Normal curve, 40% Idle-up. Given that that is probably the “true gain”, for Spectrum should I start with a gain of 99% and 78%? Something doesn’t seem right. What gain do most people start with a GY520 and DX-7?

My DX-7/450 gain in idle up is around 65% (from memory) using the ATV menu for setting gyro gain.
You will know straight away if the gain is too high as the tail will wag pretty bad when lifting off.
