Flysky TH9x questions

I know this is the spectrum forum but there is no general radio forum to my knowledge and this one is the most active so posting here ( apologies in advance )

got some questions \ problems with my flysky.

First off is a question about the Gyro setting. the gyro page has 3 configuration settings model uprate and downrate.
on the model setting you can choose between nor and gy. Whats the difference?

for uprate and downrate you have either AVC or NOR setting with the range going from 0 to 100 ( gain ) I've assigned the pit trim knob to channel 5 where my gyro gain is so the question is now what do the numbers represent? are they starting gain numbers or max gain numbers? ( assuming the pit trim knob adds uprate value when twisted CW and downrate value when twisted CCW ) They do have an effect but its difficult to say exactly how I have been just tweeking with the settings and knob to make the tail hold but I'm getting really sick of fighting the tail on my GY48 helis...

Next question is about Big T ( Trex 600N )
Big T has a sparten gyro and a governor. I have the pit trim assigned to the channel for gyro gain and the gear switch assigned to the governor channel. When I hit the gear switch quite often the tail immediately gets a horrible wag like I just maxed out the gain... WTF

I don't really know my way around either the Spartan or the governor yet so any general advice here would be great.

Third question is concerning the fly mentor that I'm about to mount for the first time to the EXI. The manual suggests using a 3 position switch. Can I reassign the F Mode switch? Doesn't seem possible. If I assign a knob in place of the switch how would it work? CW is on middle is neutral and CCW is off?
