Can a tail gyro be used to...
...control anything else other than the tail? could i use it for Elevator? I am just bored and was wondering if its able to do that?

Not with eCCPM but seen it done on mCCPM.

Hmm, I just looked up what the difference is (Yes, I didn't know ) and I am not sure why it depends on how the mixing is done? Can you explain why it works with one and not with the other? From my understanding it would work in a plane because there is no mixing involved? I was just wondering if you can lay a gyro on its side and use it to control another axis?

On mechanical mixing each stick action controls only one servo and the mixing is done mechanically on board rather than in the Tx. Consequently, any additional control you add to that servo like a gyro will control that servo only like the stick would, very simple control.
On electronic mixing where mixing is performed by the TX to control the swash you need to feed signals to all three servos like for example for Aileron right one servo has to go up and the opposite equally down etc' so introducing a gyro will only distort the swash. Of course if you had an on-board swash mixer like you get with gyro stabilization systems like Helicommand or Flymentor or CSM Syslock then the heli can be treated for all intents and purposes as for the first (mechanical) instance. In simple words you can do anything to control the swash as long as it is done before the mix is performed. The exception being CPII that, I think, actually interrogates the mixed signal and equally and proportionally mixes its output to the already mixed signal. I hope this explanation is simple enough for you to follow, the science is a lot more involved.
