Default How many motor wires is "disconnected"?

If I disconnect only one of the three wires, is that good enough to ensure no motor movement?

I typically see at least two in the instructions but I have never really tested it. I just remove main and tail blades.

But to be 100% fool-proof...you'd disconnect all 3

Often you can get away disconnecting one.

Safer to disconnect 2 as I know the Scorpion motor in my Gaui X5 motor can run (and sometimes start) with one disconnected wire (only 2 wires connected). (fortunately no damage as all blades disconnected at the time, but real eye opener).

To be perfectly safe, disconnect all 3 (HIGHLY unlikely to be able to kick over a brushless on only 1 of 3 wires, but best to be sure).

If you are killing the motor for safety reasons while working on the bench, there are much simpler safety precautions in my opinion. I use a 6v Nimh battery to run my FBL and either disconnect my throttle cable (my heli with internal BEC) or don't worry about the throttle cable but remove my BEC cables (my heli with external BEC). These methods literally take seconds and don't require me to get into the frame or to remove a pinion.

It depends on your setup, but removing motor wires and/or pinions is for the birds, especially when you are powering to make FBL adjustments, setup the head, and so forth. If powering your FBL on the bench only occurred once in a blue moon it might not be a big deal. However if you are powering on the bench once per week (like me), fooling with motor wires or pinions all the time would make me quit the hobby.

My motor start jerking on my Trex 500 pro if I disconnect 1 wire, so I disconnect 2 now.

An easy solution is just power up your fbl system with a separate power supply. I have an old lipo and esc laying around that I power up with. There's usually an empty servo port to connect power.
Then you don't have to unhook anything and you can go through your setup/adjustments without worrying about the motor spinning up.

I remove the blades. Removing one wire rarely allows anything to spin up though I had one that would stutter and fuss.

If your bench work involves anything with the ESC you're as likely as not going to need to hear the "beep codes" which naturally need the motor plugged in.

I think I had at least one case where I was still getting audible indications with one wire disconnected but I couldn't swear to it.

Once the ESC is all dialed in simply powering the fbl with a receiver battery is a good option but sooner or later you're going to have to deal with the beep codes so you might as well get used to the "blades off / be careful" drill.

If you need to disconnect the motor, pull 2 wires. I once had a 450 where the solder joint of one of the bullets failed, the ESC went nuts and POOOF! Smoke all around.
