does a 4 ch tx work the same as 6 ch tx on a sim ?

Not really.

I think you can use a 4-channel, but you're stuck with using the throttle curves defined for the model. I don't recall if those are modifiable. With a 6-channel, you can define the throttle curves in the transmitter and make the sim model more like a real model from a control standpoint.

..and then there are the 5-channel Tx's such as the DX5e.

The basic 4-channel (if it is compatible with the simulator) will let you fly. I use the DX5e in Phoenix and it's fine for me. The fifth channel is just a switch and I assign it to Idle-up most of the time. With a 4-channel, you have to use the PC keyboard for switches such as Idle-Up and Throttle Hold.

I also have a DX7 (7 channel, smart Tx) where I could mess with curves on the sim, but I tend to adjust the heli settings in the sim, rather than the on the Tx, since I fly a variety of helis, and it's easier to switch helis that way. But if you were only going to sim with just a few helis and wanted get them as close as possible to real life, and fly with your real Tx, then, yes, as TheBum says, you'll need a better Tx to get there.
