Anything above 11 for me I start to see tail artifacts and hear oscillations on the motor.

Thank you for posting your graphs BT. I had to accept a Gov gain of about 7 or 8 on my 700E 3G due to anything higher would produce the dreaded tail kick. I was told by Castle more than once that excessive high gain can and eventually will wipe the teeth right off the main gear.. I have run as high as 15 and it seemed the tail did act a bit funny. . It looks as if your temps are in line with mine. 8PWM seems to be the sweet spot. I will probably re-visit the Gov gain again and increase to see what it yields.. To be honest, Ive been fixated on temps that I haven't noticed much else.

I just logged a 5 min flight with 2350 for HS in idle 2. To my surprise, the ESC came down exceptionally cooler this time. I think the hottest it got was 105. It appears the higher the HS the more efficient. This was with 8 PWM low timing. Im satisfied with this as the final setting and feel a lot better about the ESC now. I will just spot check at the field for temps.

Can someone define what should be considered the normal and high operating temperatures of the ESC?

According to Castle, the ESC doesn't start to shut down until the log shows 250F. In practice, temps above 170F are generally considered on the 'too high' side.

One thing as I said in my last post that the 2350+ HS was the cure with my current settings. I will prob not be pulling any more data logs unless it starts to rise . I don't feel it nec to continue to monitor the data after its dialed in. I now want to see if there is any tweeking in the 3GX program that I need to do. Time to research that thread. I just checked my logs, and my max temp hovering was 140. Outside air temp was 105. I'm like you, don't know what they are supposed to be for a max. My temps were with no canopy and mounted on the top of the block.

Running 130 to 150 with 96*F ambient temps. This is with 8 gov gain, at 2100 HS 12khz pwm. The test flight for this was running full collective banked turns for a solid 5 minutes to push that motor. Temps with mild to medium 3D and general flying hover around 135 to 140 and sit there for the duration of the flight when ambient temps are 85 to 95*F. Stock gearing.

I think I will sit on my 80HV for the duration as opposed to sending it in to Castle. The logs are consistent after many flights. Maybe ,,,Just Maybe., I got a good one ? My HV 160 is still consistent on the 700 as well for over 2 years now. I will have to see the fire for myself I guess . I'll be dammed if I'll take another chance in getting a sub par replacement after waiting weeks with a downed Heli. I will wait to see how the replacements act for others. Any one else going to keep theirs?
