Hobbywing 100A V3 Governor

Okay, so I am running the Hobbywing 100A V3 Platinum ESC on my 550E V2. Up until now, I've never run a governor... I've just been using throttle curves to manage my headspeed. I would like to try out the governor, but I know nothing about how to set it up properly.

I know there are two modes of governor on the ESC... which one do I use? And what throttle curve settings do I use? How do I adjust the headspeed in governor mode if, say, I think it's running too slow or fast and want to change it?

I'm currently using the 600MX motor. FBL is an AR7200bx. FL head, running 550 Cyclones with an 11T pinion.

There is a long thread on how to calibrate the throttle ends and how to use the Gov store mode - its for the 50a v3 - but assume its same for the 100 -
