Dont see why not, you will need something to deal with the 3 phase AC you will get from it though. A BLDC motor and a 3 phase AC generator are pretty much exactly the same thing, only issue I can see is spinning it too fast and generating voltages it was not designed for. the Kv should give you an idea of what voltage you will get out for a given RPM.

So what should I do to it if it will be putting out AC instead of DC? Also how to wire the motor to my output cause the motor has 3 wires? is the power gonna be on all three wires or just two?

Power out on all 3 wires, you will need a 3 phase rectifier (basically 6 diodes, Google will have schematics) a decent size capacitor and some kind of regulator (BEC) for a stable output voltage). Make sure you figure out what to do correctly, dont want to fry anything.

There is a guy on the Gasser forum who makes generators for helis, perhaps they can help.
