Info on ECS/BEC can someone help

Can someone explain to me about the esc and bec, some servos state that they can operate 4V and 6V. What determines the voltage the servo/gyro gets and whats the best voltage? I guess 6V for a servo better for speed and torque. I’m upgrading my servos to Hitec HS-82MG for the three main servos and Futaba S9257 for the tail servo and I want to know if the stock ESC/BEC is compatible with these servos. I'm going to upgrade the Gryo to a 401 very soon, does this sound like a good system.
