You can program the the esc to learn the range and rebind all you want. But if you don't bind the Rx while the TX is in Throttle Hold, it'll spool up again just like what happened before under some circumstances.

What happened was you probably bound your Rx while you're in normal or idle up. Spektrum Rx sometimes takes more than 5 seconds to initialize, and before it initializes, the channels are sending out pulses at where you bound them. That is enough for the esc to start up the motor.

To avoid this from happening again, plug in the bind plug, power up the Rx, (use a Rx pack instead of the BEC from ESC just to be safe) hold the bind button on Tx, turn on radio with the TH off, then as soon as Tx is on, go into TH. This will bind the Rx to TH instead of whatever mode you were in.

Regarding CC's soft start, there are 100 levels of adjustment, you can make it soft start at 100% or 1%. I've tried slooooow soft start before, it can take as long as 10~15 sec!!! You probably have it set to high on yours.
