To translate Ade's link to sims:

Generally I'd recommend leaving VSync on, given your PC can keep the FPS at or above your monitor's refresh rate. It will eliminate tearing and frame skips and make the entire experience much smoother. If you're not an extreme 3D pilot, it will have little impact on your flying.

If you fly 3D, the downside for any sim is that VSync introduces one frame of delay, which at 60Hz is 16.67ms, which, depending on your flying style, can be significant as it adds up with inherent USB delay (80-120ms) and possible wireless transmission delays (~35ms, not present with direct USB connection).

If you own a monitor with high refresh rates (120...144Hz or above), the impact of VSync will be greatly reduced a lot and it's easier to justify leaving it on.

Try both, see which works best for you. It's not like it costs you anything.
