Default Modes?

During flight, on the right side of the screen there is a pop up that indicates function status, rpm1, 2 and 3, Hold, D/R etc.

There is a mode status too. But I don't see a function or shortcut to alter mode.

what tx and dongle are you using?

if you use one of the presets they are pre configured. (check the faq)

if not they are setup in tx settings -> functions.

you need to assign switches to channels in your tx which you then use to control the functions

Currently I am using an ikarus dongle (until my RX2SIM ships) along with a DX9 radio. But there is no "MODE" shown in the functions tab to configure. Just weapons, ground light, rpm1-3, throttle hold, D/R, and rescue.
