It would be easier to try to unbolt the tire than pull the receivers..
The alarm system has a mic located at the tow bar mount....
Just pulling a pin (which isn't too easy, you have to jiggle the carrier) will set it off.
I know, I tried it already.
Besides.. In its original location it's quite easy to just lower the spare and pull it from under the rear.

My solution to a similar need was a section of plywood and some risers to make a false floor inside the back of my Cherokee. Gave up about 10 inches of height + had space to put in a storage bin next to the tire. I hinged the shelf about 2/3rd back for easy access to tire an storage.

Nice idea
In order to make that work for me, I'd need to drop my rear seats.
My tire would pretty much fill the rear cargo area with the seats in place.
